Basil and Pine Nut Pesto

Freezer Tray Recipes

Ingredients:
4 cups packed fresh basil leaves
4 cloves garlic
1/2 cup pine nuts
1 1/2 cup extra-virgin olive oil, divided
Salt and freshly ground black pepper, to taste
Freshly grated Pecorino cheese (for immediate use)
Optional: handful of flax seeds

Method:
1. Add the basil, garlic, and pine nuts together in a food processor and pulse until coarsely chopped.
2. Add 1 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper to taste.
3. Spoon into the Tutti Bimbi Tray and drizzle the remaining oil over the top. Freeze for up to 3 months.
4. Pop out a portion when needed and stir in cheese.
